Uldine Daisy Mitchell Parkhurst passed away on June 13, 2020, at The Oaks at Mayview in Raleigh, NC. She was 93 years old. She was born November 15, 1926, to the late Daniel Jacob, Sr., and Daisy Betts Mitchell. She is preceded in death by her husband, Clarence. Uldine met her husband Clarence E. Parkhurst (known to many as Parkie), While working at North Carolina State University in Raleigh, NC. After eloping to South Carolina, they moved to Parkie’s home state of Massachusetts, where they lived for 10 years. While there, Uldine worked in a hat factory and their only child, Joanne Marie, was born. Deciding they had enough of the infamous Massachusetts’ winters, they moved back to Uldine’s home state of North Carolina in 1956. They then purchased the Tastee Freeze on New Bern Ave. in Raleigh. It became a regular hangout for the police department and Department of Motor Vehicle employees that worked just up the street. At that time, five hotdogs or four hamburgers for a dollar was quite a lunch. After selling the Tastee Freeze, Uldine worked at several different spots, managing snack bars, until finally deciding on a career with BB&T, where she worked until retirement. She made many lifelong friends at BB&T. She was an active member of the Ruth Circle at St. James United Methodist Church and loved participating in the annual Parade of Tables as well as taking trips with the church. Uldine enjoyed living at the Oaks of Mayview for the past 5 years, where she was well loved and cared for. Her family is incredibly grateful for the excellent care she received at Mayview. She is survived by her daughter, Joanne Davis and husband, George; grandson, Kevin; great grandson, Jackson; 2 brothers, Robert Mitchell of Florida, and Wilbur Mitchell of Raleigh.
